Erica's Mom's Green Bean Casserole

Get ready for a new version of this traditional holiday favorite!


Since it’s almost Christmas, I wanted to share the perfect veggie side dish. When Erica and I were chatting, she mentioned her go-to holiday dish is her mom’s green bean casserole. Her mom makes this casserole every year for the holidays and she is obsessed with it. It mixes ingredients from the traditional green bean casserole with some new ones. Erica, I hope I do your mom justice. Let’s get cooking!

Erica’s Mom’s Green Bean Casserole

  • 3 cans French cut green beans (drained)

  • 4 tablespoons flour

  • 6 tablespoons butter (4 for the flour mix and 2 for the top)

  • 2 cups sour cream

  • 2 teaspoons minced onion (dried in the jar works)

  • 2 teaspoons sugar

  • Salt and pepper

  • ½ pound swiss cheese (I used shredded, but you can also use slices)

  • French fried onion rings

Preheat oven to 325 degrees. Pour green beans into a greased 7x11 pan. Add butter and flour in a pan and stir until smooth. Add sour cream, minced onion, sugar, salt and butter – cook on low heat until it bubbles. Stir frequently. Pour mixture over the green beans. Cover with swiss cheese, top with onion rings and dot with remaining butter. Bake for 30-40 minutes or until top is a beautiful golden brown. Enjoy!

Preheat oven to 325 degrees. Add green beans to a greased 7x11 pan.


Add butter and flour to a pan. Heat until combined. Add sour cream, minced onion, sugar, salt and butter – cook on low heat until it bubbles. Stir frequently.


Pour mixture over green beans.


Cover with cheese, friend onions and butter.


Bake at 325 for 30-40 minutes or until golden brown.
