My First Post!!!

Updated: Oct 11, 2021

Learn about my favorite comfort food...hot dog casserole.

Since this is my first post, I wanted to share a recipe that is meaningful to me. The one that makes me think of my childhood, but I also come back to now that I’m an adult. It’s simple and a little trashy, but oh so good. It’s hot dog casserole. Yes, you heard me right – hot dog casserole.

I have the best mom in the world. She is kind, smart and a literal lifesaver (she was a registered nurse for 40+ years). She was a working mom, so she, understandably, wasn't able to make time consuming meals for me. So when she found this straightforward recipe, she made it often with no complaints from me :)

It's comforting to me because it reminds me of my childhood and more specifically my mom. She takes great pride in making this casserole for me and I love that! It makes me feel special.

So, without further ado, let’s get cooking!

Hot Dog Casserole

  • 2 tbsp butter

  • ¾ cup chopped onion

  • 2 ½ cups egg noodles, uncooked

  • 1 (10oz) can tomato soup

  • 1 cup milk

  • 1 cup shredded cheddar cheese

  • 1 lb sliced hot dogs

First, heat the butter in a large skillet over medium heat. Sauté the onions and hot dogs in the butter until the onions start to turn translucent and smell like heaven. Then layer the noodles over the hot dog and onion mixture. Wisk together the soup and milk in a small bowl, and then pour it over the noodles. Sprinkle the cheese over the top, cover the pan and bring the mixture to a boil.

Reduce the heat to low and let it simmer for 25-30 minutes. When the noodles are cooked and a little al dente, you are ready to eat!

So that’s the basic recipe, but feel free to get creative. Use sausage or different cheeses. Add your favorite veggies. I live in DC and I’m thinking of trying it with our beloved half-smokes. Experiment, that’s the beauty of food!
